Cheesy Chili Beans Stuffed Peppers Recipe

My kiddos get bored if we have the same type of meals over and over again so I try to mix things up when I can. I normally just look at what I have to work with and throw something new and different together in hopes that they like it. =) One night the creation of Cheesy Chili Bean Stuffed Peppers was born.

  • Yellow, Red and Orange Bell Peppers
  • 1 Can of Chili Beans with Chili Sauce
  • 2 packages of Minute Ready To Serve Brown Rice Cups
  • 1 Can of Whole Kernal Sweet Corn
  • 1 Cup Shredded Cheddar Cheese
  • Tobasco Sauce (optional)

Start out by washing and cleaning your peppers. I always love using Fit Wash for my veggies and fruit knowing that it really helps clean them well.

Stuffed-Peppers Stuffed Peppers, Recipe Now you can do the traditional cut to your peppers to stuff them but on this evening I decided to cut some from the top and then cut some in half.  I really love colorful peppers and think they are perfect to serve in the Spring and Summer.

StuffedPeppersRecipe2 After you have your peppers ready to stuff. Cook your rice in the microwave using the directions provided. I used the 60 second type so it cut down on cooking time. When that is cooked, add it to a large bowl adding the corn and beans along with it. Mix well then use Tobasco Sauce if you choose to add some spicy flavor. Mix well again.

Now stuff your peppers with the mixture and top with the shredded cheese. Cook for 30-40 minutes on 350 degrees farenheit. Serve and Enjoy! =)

  2. Cut them from the top or cut them in half
  3. Cook rice as directions request
  4. Add rice, beans and corn in a large bowl and mix well
  5. Add Tobasco Sauce for flavor and mix well again
  6. Stuff each pepper with mixture
  7. Top with Shredded Cheese
  8. Bake for 30-40 minutes on 350 degrees
  9. Serve and Enjoy!
