Healthier Banana Bread


Ok so the other day the kiddos asked if I could make some banana bread and I thought to myself I hadn’t made any in years. The question now since we have decided to eat healthier in our family and as organic as we can was to find a recipe that would be good and healthy. I decided to wing it and substitute different ingredients for hopefully healthier ones.


This is the recipe and steps we took to make banana bread:

3 ripe bananas

2 All Natural Eggs

1/4 cup unsweetened applesauce

1/2 cup Bobs Red Mill organic Coconut Flour

1/2 Tsp baking soda

1/2 Tsp baking powder

1/2 ounce chopped pecans

I put the 3 bananas in a blender until smooth.  I then put that mixture into a separate bowl and added all remaining ingredients. My kiddos were happy to stir the mixture. =) We then baked for 30 minutes at 325F. The above recipe made enough just for one loaf. It came out pretty good but if I were to  change anything I would drop the applesauce down to 1/4 of a cup instead of 1/2 and added more nuts. =) I don’t claim to be a chef lol but hey I try. =)

    I always use organic butter the flour the pan. At least I know what I have. We went Vegetarian and Totally Organic about 6 months ago. Sounds like a super recipe! I also cut my Sunflower heads off. I am sending you a few. I think you may have a few helpers to pick the seeds!

    Oh just an FYI though, canola oil is not healthy at all.
