Low-Fat Potato Salad Recipe



It’s my favorite time of the year! Spring is here and the snow has finally melted and it’s getting warmer. I love listening to birds chirping, watching the kiddos play outside and planting flowers and veggies. Another thing I love about this time of year is picnics! =) Who doesn’t love to pack a nice lunch and head out near the water or your favorite park and enjoy the beautiful outdoors? In this post I am going to share a Low-Fat recipe for Potato Salad using Stonyfield Organic Yogurt to really cut down on calories. I’m really excited about this one because I was able to use something right from my own garden.


  • 4 White Potatoes
  • 1 tsp Mustard
  • 1 Cup Stonyfield Yogurt (Plain)
  • 1 Tbls Minced Onion
  • 1/2 tsp Kosher Salt
  • 1/4 of a Cucumber
  • Chives
  • Pepper


The first step I did was wash the potatoes, then diced them into small pieces, let them sit in a bowl full of COLD water for a few minutes then cooked them on the stove. Cooking potatoes for potato salad can get tricky because if they are cooked too long then you end up with mashed potatoes so I always make sure to stand near by and check constantly. After those were done I poured them into a strainer and ran cool water over them to cool them completely.


Meanwhile, I peeled the cucumber and cut that into small pieces. I currently have Chives growing so I cut a few of those, washed, then diced those up as well. After the potatoes were completely cooled I added the diced cucumber, chives, the mustard, Kosher salt, minced onion, and the yogurt to the potatoes into a larger bowl. Mixed well and added ground peppercorn to the very top.


I don’t normally get creative too often in the kitchen making up recipes but I do have to say this turned out very well. It tastes very yummy too. =) So if you’re looking for something new to try to take along on your next picnic try my recipe.
