Never get bored with lunches again with Catherine McCords new “Weelicious Lunches” cookbook. I don’t know about you but my kids seem to ask and eat the same lunches day after day and it’s just become a habit of having the same thing. I couldn’t wait to open up this new book with my kiddos and see all the possibilities. I’ve always wanted to get crafty in the kitchen as far as making new foods for my family but as soon as I open up a cookbook I never have all the ingredients I need. Catherine talks about the well-stocked lunch pantry and what she keeps on hand so she can make anything her kids like to eat. A few items being Baby Carrots, Bananas, and Yogurt. What a great idea and now that I have this wonderful book I am going to have to make my own list of staples to have on hand at all times.
There are so many recipes in this book you can find something for everyone from ham and cheese muffins, peanut butter pancake sandwiches, chicken salad roll ups and so much more! My kiddos and I decided on two different dips to make to go with their veggies today and ended up making the Carmalized Onion Dip. The recipe called for a large white onion, salt, garlic clove, olive oil, and plain greek yogurt. (We used Stonyfield). After cooking the chopped onions and garlic we added the rest of the ingredients after they had cooled in our small food processor and mixed until the mixture was blended. It smelled so good. My kiddos loved using the dip with their carrots and I myself thought it tasted pretty good too. =) I can’t wait to make more recipes out of this book.
