Simple Stuffed Peppers Recipe

Just the other day my neighbor brought me over some peppers. She’s always bringing me yummy fruits and veggies and after seeing these pretty peppers in different colors it got me thinking. We haven’t had stuffed peppers in a long time!

Stuffed-Peppers

We are a large and busy family so I’m always trying to figure out easy and new foods to make. We are trying to watch what we eat so we substitute healthier options when we can. The prep time for these stuffed peppers isn’t very long but it does take some time cooking in the oven. It’s well worth it though. =)

Ingredients:

  • 1 lb Ground Turkey or Hamburger
  • 1 cup dry Brown or White Rice
  • 2 Tomatoes
  • 4 Peppers (Any color or multiple colors)
  • 1 Large Onion (use only 1/2)
  • Garlic
  • Minced onion spice
  • Italian Seasoning
  • Salt
  • Pepper

Instructions:

  • Start out by washing all vegetables thoroughly.
  • Start rice and use instructions on box or package.
  • After adding rice and letting it simmer, start the ground turkey or hamburger in a frying pan and cook well. Meanwhile, while the rice and ground meat are cooking..
  • Cut the tops off the peppers and discard the seeds and inner part on each.

  •  Cut the tomatoes in half and put in a small blender or chopper and blend well.
  • Chop onion into small pieces.

  • When meat and rice are complete, add them to a large bowl, mix in the onion, seasonings, and tomato sauce. (Save about 1/4 of the tomato to add later)
  • Mix well.

  • Fill each pepper and top with remaining tomato sauce.
  • Bake on 375 degrees for 45 minutes.
