Now that I have started making vegetarian meals most nights, I have to admit I run out of ideas to keep everyone happy. Certain veggies and almost all grains we can all agree on so I always include those. Just recently I was introduced to Village Harvest Farro and decided it would be a great pair with veggies and tofu.

My Tofu Veggie Scramble over Village Harvest Rice came out really good and is really easy to make. It makes a great vegetarian meal and if you’re not into that you can always replace the tofu with chicken or beef. 😉

Tofu Veggie Scramble on Farro

Ingredients:

  • 1 cup dry Village Harvest Farro
  • 1 clove garlic minced
  • 1 medium onion chopped
  • 1 green bell pepper sliced into 2 inch strips
  • 1 red bell pepper sliced into 2 inch strips
  • 1 head of broccoli cut into smaller pieces
  • 1 14 oz package of tofu
  • 1 1/2 tablespoons of coconut oil (for cooking in pan)

It is always a good idea to get rid of the excess water and let it sit out for a few hours before hand. I personally wrap my tofu in clean kitchen towels or paper towels and set it between a plate and heavy pan. That way the water gets squeezed out in the process.

When your ready to begin start out by washing the broccoli and peppers.

Then start preparing your Village Harvest Farro using the instructions on package. It takes about 25-30 minutes so that is why I start this close to the beginning.

Then prepare your veggies by the instructions above under ingredients.

Using a large pan or wok on medium high heat add the 1 1/2 tablespoons of coconut oil and let heat for a bit.

Always making sure to stir well and never walking away from the pan.

Place 1/2 cup to a cup of Village Harvest Farro on your plate, top with veggies and enjoy!

  1. Prepare tofu by leaving out wrapped in paper towels for at least 2 hours to remove excess water.
  2. When your ready to begin start out by washing the broccoli and peppers.
  3. Prepare your Village Harvest Farro using the instructions on package.
  4. Add your tofu to a food processor if you have one, to crumble, if you don't you can always break it up by hand.
  5. Prepare your veggies by the instructions above under ingredients.
  6. Using a large pan or wok on medium high heat add the 1½ tablespoons of coconut oil and let heat for a bit.
  7. Add the garlic and onion to brown for 2-3 minutes, then add the broccoli and cook for another 2 minutes and include the remaining veggies. Always making sure to stir well and never walking away from the pan.
  8. After about 10-12 minutes add the crumbled tofu and cook another 5-7 minutes. At this time you could always add some spices if you choose too. 😉
  9. Place a ½ cup to 1 cup of Farro on dish and top with veggies.

    This is a new recipe on me. I have not heard of farro before. It looks tasty though. I am willing to give it a try.

  • This looks good and the tofu doesn’t seem so drastic like I usually see it. I’m fine with tofu, but sometimes the consistency is so “wet” that it ends up being weird.
